One of the best things about small-batch roasting is delivering coffee at its peak. Several of you have asked about the freshness window, and I’m happy to clarify how it works with real-world shipping.
The peak flavor window is measured from the roast date (clearly marked on every bag). This is when the coffee degasses properly and the bright, nuanced notes—whether it’s the apple and nougat in Andean Summit or the chocolate undertones in The Zenith—shine their brightest.
- Days 5–7: The coffee has degassed enough for flavors to open up nicely. (I’ve found 4 days is often still too soon—the profile hasn’t fully settled.)
- Days 7–21: Sweet spot for most of our roasts. This is when we recommend enjoying it for the fullest experience.
- Beyond 21 days: It’s still perfectly good and safe, but the vibrant top notes start to mellow. It won’t go “bad”—just less lively.
Opened bag? Once you open it, aim to use it within 1–2 weeks for best results. Keep it in an airtight container, away from light, heat, and moisture.
About shipping older roasts: Sometimes a bag you receive might be 2–3 weeks post-roast. I’d rather get great coffee into your hands than waste it. That coffee is still well within a quality window and will brew beautifully—especially if you store it properly and use it soon. We only ship what we’d drink ourselves.
Quick Tips for Maximum Flavor:
- Grind fresh right before brewing.
- Store unopened bags in a cool, dark place.
- For iced drinks or cold brew, slightly older coffee can actually work wonderfully.
