If you’ve been following along in the Journal, you know I’m all about making coffee approachable and fun, with no rules except enjoying it your way. Now let’s get to the good stuff: the coffees themselves. I’m starting with five carefully chosen ones—two blends and three single-origins—that each bring a unique story and flavor adventure to your cup. These are roasted fresh in small batches with my Bellwether roaster, and they’re versatile across light to dark roasts (check out my post on roast levels for how that changes things). Whether you’re brewing at home or sharing with friends, here’s a quick intro to the lineup. Which one calls to you first?
Basecamp (Decaf Mexico Rio Blanco EA)
My go-to for a gentle, anytime sip—think of it as your reliable starting point on the trail. This decaf from Chiapas, Mexico, shines with butterscotch, honey, and fruit leather notes. Light roasts bring cane sugar and candied orange; medium deepens to rich butterscotch; dark adds molasses and toasted marshmallow. Smooth and low-acidity, it’s perfect for batch brew without the buzz. From Casa Común federation (uniting 1,200 producers with a Youth Coffee Project for sustainable growth); grown in Sierra Fronteriza on small farms; elevation 1500-1900 MASL; washed process; Bourbon, Oro Azteca cultivars. Decaffeinated naturally via sugarcane ethyl alcohol.
Terra Incognita (Meridian Blend)
Like venturing into uncharted territory—this balanced blend is designed for sweetness and versatility, pulling from seasonal coffees for a crowd-pleasing profile. Light roasts highlight citrus, vanilla, caramel, and toffee; darker ones shift to toasted hazelnut, bittersweet chocolate, and brown sugar. It’s fantastic as drip or espresso, with creamy shots pulling caramel and hazelnut. Components rotate for freshness, but it’s always about that reliable, all-around adventure. Elevation varies by origin; washed/natural processes; mixed cultivars.
First Light (Sunrise Blend)
Inspired by that first glow of dawn—this blend is built on sweetness, silky body, and subtle acidity. A mix of naturally processed Brazilian and washed Ethiopian coffees, it delivers ripe red cherry in lighter roasts, shining as drip or cold brew with cola and tamarind notes blooming. Dark roasts bring deep pipe tobacco and malty sweetness. Versatile with or without cream, and great for espresso. Grown at varying elevations; natural/washed processes; mixed cultivars like Bourbon and heirloom. A smooth start to any day.
The Zenith (Colombia Asobombo)
Reaching the peak of flavor—this women-produced lot from Huila, Colombia, celebrates versatility and structure. Distinct dark cherry and chocolate notes with a creamy body across roasts: light brings milk chocolate and maraschino cherry; medium adds brown sugar; medium-dark deepens to toffee and molasses; dark centers on chocolate with subtle fruit. Excellent as espresso with lush crema or batch brew. From Asobombo co-op (85 women farmers focused on gender equity, quality, and family opportunities); elevation 1700-2000 MASL; washed process; Caturra, Castillo, Colombia cultivars. Organic and impactful.
Latitude 15 (Mexico Sierra Azul)
A nod to the equatorial lines of exploration—this women-produced single-origin from Chiapas, Mexico, is approachable and layered. Light roasts offer honeycomb, milk chocolate, almond, and orange; medium brings cola and warm spice; darker shifts to toasted nuts, caramel, and molasses. Heavy-bodied at dark, with lush crema in espresso. From Sierra Azul co-op (300 smallholders in El Triunfo Biosphere Reserve, founded for sustainable livelihoods); elevation 1200-1900 MASL; washed process; Bourbon, Gesha, Mondo Nuovo, Typica cultivars. Fair Trade, women’s lot, organic—a versatile gem with purpose.
